Eileen’s Pumpkin Paleo Pancakes or Waffles

This recipe makes delicious Paleo pancakes or waffles. I make the whole batch and freeze them or keep them in the fridge. Totally nutritious and delicious, they make an easy to grab breakfast and out the door.
You can drizzle them with a little honey or top with your favorite fruit.
Ingredients:
1 1/2 tsp pumkin pie spice
1 1/2 cups almond flour
1 1/2 tsp vanilla
1/2 tsp cardamom
1/2 tsp ground ginger
1 tsp cinnamon
3 pinches baking soda
1 cup pumpkin
juice of 1/2 lemon
3 Tbsp honey or coconut sugar
6 eggs
2 Tbsp. Coconut Oil
1/4 cup chopped pecans opt.
** If making waffles, brush waffle maker with coconut oil before pouring on batter
Mix dry ingredients together with a wire whisk. Then add the rest of the ingredients and mix with spoon.
In a nonstick skillet on medium to low heat, add 2 Tbsp. coconut oil. Add several heaping tablespoons of batter (do not crowd the pan). When the top of the pancake starts to bubble flip the pancakes over and cook the other side. When done set on a plate to cool or serve immediately.
If making waffles follow manufacturers directions.
