Oven Roasted Bacon Wrapped Asparagus

 Here is a great easy and delicious idea! 

This appetizer or side dish is so quick and easy to make and it’s really delicious.  This is great for family or
company or even at a holiday table.

** One note:  I don’t encourage bacon everyday.  I use only nitrite free uncured organic bacon.  I know some people say bacon is paleo but it is still a processed meat with high sodium so please use it sparingly.


1 bunch fresh asparagus stem end removed*
(approximately  4 per person)
1 Pkg. Organic Nitrite Free uncured bacon (I use Maverick Uncured Applewood Smoked Bacon)

Preheat oven to 400° F.

*Bend the bottom third portion of the asparagus.   (See photo) It will snap to the point where the asparagus stem is tender.  Discard bottoms.  Rinse the asparagus in cool water and dry.

Wrap each asparagus with ½ slice of nitrite free bacon in a spiral fashion from the bottom to the top leaving the flower exposed.

Place on grate on top of a cookie sheet (to catch the grease).

If you line the sheet with aluminum foil, clean up will be a snap! (That’s a pun!)

Roast for 10 minutes. Turn with tongs and cook for 10 minutes more, until bacon is nicely and crisp.

Serve immediately.

* You can also make this on the grill as well.  It get a wonderfully deep flavor.  But watch it closely as it goes from being almost done to over done quickly

    Made these tonight. I bundled about 5-6 spears, brushed them with a mix if olive oil, lemon juice, and balsamic vinegar, then sprinkled with flax seeds. Wrapped it all up with thick cut “uncured” applewood smoked bacon, and cooked it for a bit longer (due to increased number per serving). Great side!

    Made this for the whole family tonight – paleo friendly for the hubby, allergy friendly for the second-born and really, bacon just makes everything better, so all my boys loved it. Thanks for the recipe!

      Thanks so much for letting me know :o) I love when I get feed back. I agree, bacon makes everything better. For the holidays for a great treat – Slice bacon strips in half and sprinkle smokey paprika on each slice. (Just a little. This has some heat to it.) Take some dried dates and in the center, place a small piece of pineapple. Wrap the date with the bacon, secure with a toothpick and place on a baking sheet. Place sheet in 400 degree oven and cook until the bacon is nice and crisp. Make sure to let them cool before eating them! They are very hot when the come out. Yum!
