Paleo Pan Seared Chicken with Garlic and Lemon Sauce

Paleo Pan Seared Chicken with Garlic and Lemon Sauce

(serves 2-4)

This chicken dish is sooo easy to prepare, has amazing flavor and of course Paleo!  I serve it with sautéed Cauliflower and a crisp salad.  Yum.  I use organic farm raised chicken so I get to eat some of the skin too :o

4 organic farm raised pastured chicken thighs
2 tbsp. Extra Virgin Olive Oil
Kosher or sea salt and freshly ground black pepper to taste
Juice of 1 lemon
2-3 garlic cloves, minced or passed through a garlic press
2 Tbsp. chopped fresh Italian parsley (flat leaf) or 1 tbsp. dried.

In a stainless steel or nonstick fry pan add olive oil on medium-low heat and place seasoned chicken skin side down in pan. The trick is to leave the chicken alone and let it brown.  Don’t turn it over until the skin is nicely browned and the chicken is cooked halfway through.  (approx 10 minutes) When nicely golden (see picture above) turn the chicken over and cook on other side until done.

Remove chicken from pan and pour out excess fat.  On low heat put the juice of the lemon and scrape up any of the golden bits on the bottom of the pan (about a minute) then add the garlic and sauté for 10 seconds.

Return the chicken to the pan coating both sides with the lemon juice and garlic and add the parsley.  Cook covered for about a minute for the sauce to thicken.  Check for seasoning and serve.  That easy.

When you use a great chicken you get a great result.  If you can’t get a farm pastured chicken then at least use organic.

You can also make it without the skin.

If needed, you can add a 1/4 cup of chicken stock, white wine or water to add to the braise but cook it down to thicken.  Serve with a veggie and salad.

    This was absolutely divine. I used chicken breasts instead. Thank you so much for this awesome recipe. I can’t believe it is Paleo friendly :)
